Back in the time when I used to live in Southern California, carne asada tacos used to be a staple in my kitchen. We had a friend who used to bring us the carne (beef already marinated with “secret” ingredients) from Brawley, a small city 25 miles away from the Mexican border. We grilled the beef to have carne asada tacos that of course we paired with ice-cold beers!

It’s getting hot in Miami and my sister in law Marian was visiting, so I decided to create a skinny version of those carne asada tacos and enjoy them… with a light beer! I garnished them with two delicious salsas: a cilantro green salsa and a raw tomato salsa, and I paired them with an ice-cold Michelob ULTRA, bingo!

I told her it only has 95 calories and 2.6 carbs and has 80% less carbs than Corona Extra, so we both agree this is the lighter way to refresh after a long work day. So we had our skinny carne asada tacos (loaded with iceberg lettuce and my very light salsas) with our Michelob ULTRA heladas, just the way we like it.

To make your own carne asada the simple way, season a lean cut of beef with salt and pepper and grill it. Once the beef is done, slice it. To assemble the tacos, slice an iceberg lettuce in julienne and put it over corn tortillas, add the beef slices and garnish with both salsas and some fat free sour cream.
