Easy Veggie Turmeric Gravy

We all know this Thanksgiving is going to be a different one in many ways. This year has been a roller coaster of emotions. We all have been tested one way or the other. No matter what, we still have so many reasons to be thankful.

Our Thanksgiving celebration is going to be a party of four. We decided to skip the turkey and instead enjoy a nice piece of baked salmon. With the help of my boys, I made a list of the essential, non-negotiable side dishes, and desserts… Of course, that list includes gravy… a very special one: made of veggies and turmeric…

Besides the salmon, deluxe mac and cheese, mash potatoes and gravy, a green salad, and a trilogy of pies: pumpkin, pecan, and apple, to please everyone.

I usually make my herb-infused gravy with the turkey drippings. But since we won’t have a bird this year, Better Than Bouillon comes in super handy in making gravy from scratch.

Homemade Gravy the Flavor you Want

My only issue was picking the flavor. OMG! There are so many options. Since forever, my favorite Better Than Bouillon is the roasted beef base. More recently, a great allied in my kitchen is the roasted garlic base.

They have a vegetarian no beef base, and a vegetarian no chicken base. Also available are the premium roasted chicken base, premium turkey base, premium seasoned vegetable base, and the new premium sautéed onion…

I must confess I was tempted by the turkey base, but it wouldn’t match my salmon. So I ended with the sautéed onion. Bingo! This is, trust me, the easiest way to add that “cook all day” flavor without the hustle. A half teaspoon will do the job.

After all the stress this year, cooking for the holidays with Better Than Bouillon is a blessing. It allows me to elevate my holiday meals, as well as my everyday dishes.

How to Make Veggie Turmeric Gravy

To make this easy veggie gravy recipe, I sliced onion, garlic, celery, and carrot, and sautéed them in melted butter with olive oil. For a vegan version, you can skip the butter and the olive oil will do the job.

Then, I added sugar-free apple juice and my Better Than Bouillon sautéed onion base. For that beautiful yellow color, a half teaspoon of turmeric is all you need. I also added a sprig of rosemary and simmered it all for 45 minutes.

There is no need for salt or starch or any flour. Just blend the mixture until creamy. The result is a flavorful, yet delicate silky gravy that everybody will love.

Veggie Turmeric Gravy

Servings: 1 cups

Ingredients

  • 4 tablespoons butter unsalted, divided
  • 1 tablespoon olive oil
  • 1/4 cup onion chopped
  • 1/2 cup celery chopped
  • 1/2 cup carrots chopped
  • 1/4 teaspoon turmeric
  • 1 rosemary sprig
  • 1 1/4 cups apple juice sugar-free
  • 1/2 cup water
  • 1 teaspoon Better Than Bouillon Sautéed Onion Base

Instructions

  • In a medium pot over medium heat, add half of the butter and the olive oil.
  • Once the butter is melted, add the onion, celery, carrots, and rosemary. Stir and sauté for 10 minutes.
  • Add the turmeric, apple juice, water, and bouillon. Stir and bring to boil.
  • Once it boils, reduce the heat and simmer uncovered for 45 minutes.
  • Discard the rosemary.
  • In the vase of a blender, blend until a creamy sauce is formed.
  • Add the rest of the butter and serve.
