A recipe inspired by Irish colcannon
I discovered this recipe recently on Instagram. I don’t remember whose video it was, but the promise that after trying it I wouldn’t want to eat any other mash kept resonating in my head. After all, leeks and potatoes are a match made in heaven.
I didn’t have kale (as the video suggested), but I did have fresh Swiss chard left over from the last time I made my cannellini soup. So I got to work, and the result was this delicious mashed potato dish that I loved so much I decided to share it with you.
While researching, I discovered that in Ireland and some regions of Scotland, they prepare a mashed potato dish to which they add cabbage, butter, salt, and pepper, called colcannon. Some people also add onion, garlic, or heavy cream.

Although I haven’t tried the original colcannon, I can say that whoever came up with the idea of adding sautéed leeks in butter to this recipe is a genius! My personal touch is the Swiss chard, which adds color and freshness, and the pinch of white pepper, which I think works better than black pepper.
(And now you know that this will be the mash at my Thanksgiving dinner 2025).

How to Make Mashed Potatoes with Leeks and Swiss Chard

- Cook the potatoes: peel and cut the potatoes, cover them with water and a little salt, and cook until tender.
- Prepare the sauté: in melted butter, sauté the leeks until they wilt.
- Add the Swiss chard: incorporate it into the sauté and cook for a few more minutes.
- Combine the mash: pass the potatoes through a ricer and mix them with the vegetables and heavy cream.

Mashed Potatoes with Leeks and Swiss Chard
Ingredients
- 1 pound (450 g) potatoes, peeled and cut into chunks(
- 4 tablespoons (60 g) butter
- 3 cups (240 g) leeks, cut into slices
- 2 cups (90 g) Swiss chard, chopped
- ¾ cup (180 ml) heavy cream
- Coarse sea salt to taste
- Freshly ground white pepper to taste
Instructions
- In a pot, place the potatoes with enough water and a little salt. Cook over medium-high heat until tender (about 12 minutes). Set aside.
- In a deep skillet, melt the butter over medium heat. Add the leeks, salt, and pepper, and cook uncovered for about 10 minutes, until they wilt.
- Lower the heat, add the Swiss chard, and cook for 5 more minutes. Remove from heat, incorporate the heavy cream, and mix.
- Pass the potatoes through a ricer and combine them with the vegetables. Stir until everything is well incorporated.
- Adjust the seasoning and serve hot or warm.
