- 1 pound (450 g) potatoes, peeled and cut into chunks(
- 4 tablespoons (60 g) butter
- 3 cups (240 g) leeks, cut into slices
- 2 cups (90 g) Swiss chard, chopped
- ¾ cup (180 ml) heavy cream
- Coarse sea salt to taste
- Freshly ground white pepper to taste
In a pot, place the potatoes with enough water and a little salt. Cook over medium-high heat until tender (about 12 minutes). Set aside.
In a deep skillet, melt the butter over medium heat. Add the leeks, salt, and pepper, and cook uncovered for about 10 minutes, until they wilt.
Lower the heat, add the Swiss chard, and cook for 5 more minutes. Remove from heat, incorporate the heavy cream, and mix.
Pass the potatoes through a ricer and combine them with the vegetables. Stir until everything is well incorporated.
Adjust the seasoning and serve hot or warm.
