Double Chocolate Cranberry Banana Bread

Ingredients

  • 3 ripe bananas
  • cup butter melted
  • ½ cup brown sugar
  • 1 egg slightly beaten
  • 1 teaspoon vanilla extract
  • 1 ¼ cup all purpose flour plus 1 tablespoon to cover the cranberries
  • cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ BAILEYS® Original Irish Cream Baking Chips
  • ½ cup dried cranberries

Instructions

  • Preheat the oven to 350°F.
  • In a bowl with a fork puree the bananas.
  • Add melted butter and sugar and combine.
  • Stir in the egg and vanilla extract.
  • In another bowl combine the flour, cocoa powder, baking powder and baking soda.
  • Add dry ingredients to the banana mixture and stir until well combined.
  • In a small bowl, add the cranberries and toss them with 1 tablespoon of flour, and combine to make sure they are all well coated.
  • Add the cranberries and the chocolate chips to the batter and carefully fold.
  • Spray a 5x9-inch loaf pan with baking spray.
  • Pour the batter in the pan and place it in the middle rack of the oven and bake for 55 minutes to 1 hour.
  • Let cool down for 10 minutes.
  • Remove from the pan and let it cool down completely on a cooling rack before serving.
