We are pancakes lovers at home. That is not a secret. But I never thought these sweet potato pancakes with candied pecans were going to be such an instant success!I made them commissioned by Farberware Cookware, which asked me for a recipe for the whole family, using whole ingredients and to be enjoyed during the holiday season.
So I thought, what if, for Christmas breakfast, or any day after, I make sweet potatoes pancakes and to make them more festive, I toss them with candied pecans?
As they have molasses, cinnamon and vanilla, these pancakes evoke my favorite season which for me is the most wonderful time of the year.
But, at the same time, they only have a spoonful of brown sugar and molasses and a good amount of sweet potatoes.
