Rigatoni with Veggie "Ragú" (fake Bolognese Sauce)

- 1 package rigatoni cooked al dente
- 1/4 cup olive oil
- 1 cup onion ground in a food processor
- 4 garlic cloves minced
- 1 cup red bell pepper de-veined or seeded, ground in a food processor
- 1 3/4 cups carrots ground in a food processor
- 4 cups tomatoes roughly blended
- 2 tablespoons beef bouillon I used Better Than Bouillon
- Parmesan cheese grated, I used Parmigiano Reggiano
In a deep pan, over medium heat, heat the oil and sauté the onion and garlic until wilted, about 5 minutes.
Add red bell pepper and sauté, stirring occasionally, for 5 more minutes.
Add carrots, stir and cook for 10 more minutes.
Add tomatoes and beef bouillon, stir, and bring to a boil over medium-high heat.
Once it comes to a boil, lower the heat to medium-low, and simmer, covered, for 20 minutes.
Serve over pasta and top off with Parmesan cheese.
