Gluten-free, sugar-free waffles with strawberries
These are the most delicious waffles ever. Crunchy outside, and soft and caky on the inside. They are gluten-free, sugar-free, and perfect for weekend brunches. Serve them with strawberries and they are perfect for Valentine's or Mother's Day.

- 2 cups milk
- 2 teaspoons white vinegar
- 2 eggs
- 3 tablespoons butter melted
- 1 cup of almond flour
- ¾ cup gluten-free all-purpose flour
- 1 pinch salt
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 3 cups strawberries washed, dried and cut into 4
- 6 tablespoons Maple syrup
- Non-sugar confectioners sugar substitute
- Sprigs of spearmint to decorate
In a bowl, pour the milk and add the vinegar. Let stand 5 minutes.
Preheat the waffle iron.
Add the eggs and beat lightly.
Add the melted butter and almond flour, and mix.
Add the gluten-free all-purpose flour and mix again.
Add the salt, baking powder and baking soda and mix. Make sure the mixture is lump-free. Let it rest for about 3 minutes. You may need to add a little more milk (that will depend on how thick the mixture is).
Pour the mixture into the waffle iron depending on the size of it. In this case, mine to make a waffle requires ¾ cup.
Cook the waffles according to the instructions on your waffle iron and if you like them more or less toasted.
Serve with fresh strawberries (or fruit of your choice) and maple syrup. Sprinkle with snow sugar substitute.
