- ¼ pound smoked bacon, frozen and finely chopped
- 1 cup yellow onion, finely chopped
- 2 garlic cloves, crushed
- 4 parsley sprigs
- 3 tablespoons unsalted butter
- 2 cups carrots. finely diced
- 2 cups celery, finely diced
- 2 quarts of water
- Coarse sea salt
- Black pepper freshly ground white pepper
Add the water and the lentils in a stock pan over medium heat and cook for 20 minutes.
Place the bacon in a saucepan over medium heat and cook, stirring for about 3 minutes.
Add the onions, garlic, and parsley and cook until the onions are translucent, 5 minutes.
Add the butter, carrots and celery. Add two cups of the lentil water to the bacon and vegetables, and simmer for 5 minutes.
Discard the parsley.
Add the bacon and vegetables mix to the lentils.
Season with salt and pepper and simmer until the lentils are soft, 10 more minutes.
