- 1 cup seedless watermelon cubes
- 6 peppermint leaves
- ¾ oz fresh lime juice
- ½ oz mint syrup
- 1 ½ oz Ron de Venezuela Santa Teresa Añejo
- 1 oz sparkling water
In a shaker, muddle the watermelon and spearmint.
Add mint syrup, lime juice, and rum.
Add crushed ice and shake well.
Strain into a rock glass filled with ice cubes.
Top off with sparkling water or club soda and garnish with a watermelon wedge.
