BBQ Chicken Thighs

  • 12 chicken thighs
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon allspice
  • ¼ teaspoon ground ginger
  • ½ teaspoon dried thyme leaves
  • ¼ teaspoon paprika
  • ½ teaspoon brown sugar
  • Coarse sea salt
  • ½ cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon honey
  • ¼ teaspoon ground cinnamon


  • Preheat the grill.
  • In a mortar, muddle all the ingredients for the rub: red pepper, cinnamon, allspice, ginger, thyme, paprika, brown sugar and salt.
  • Season the chicken with the rub.
  • Put the chicken on the grill, over indirect fire. Cover and cook for 6-8 minutes.
  • In a bowl put all the ingredients for the BBQ sauce: ketchup, Worcestershire sauce, honey and cinnamon. Mix with a spoon until a homogeneous sauce is formed.
  • Turn the chicken thighs and cook for about 6 minutes more.
  • Brush the chicken thighs with abundant BBQ sauce and cook for 2 minutes more so that the sauce sticks to the chicken.
  • Serve hot and watch them devour them.
