I know a cocktail is well balanced when I sip it and want a second one. If I start mixing it regularly and talking about that, it means it\u2019s a \u201cgood\u201d one. But if I decide to restock my homemade falernum<\/a> bottle, just to have it available for that specific cocktail, that means that cocktail is heaven sent.

This is the case of Solera<\/em>. Created by mixologist Dominic Venegas<\/a>, currently bartending at Smuggler\u2019s Cove<\/a> \u2014a not-to-be-missed rum bar in San Francisco\u2014, this cocktail is the perfect combination of Santa Teresa 1796 Ron Antiguo de Solera<\/a><\/em> and\u00a0sherry, with the spicy notes of falernum.<\/p>\n<\/div>\n

Santa Teresa 1796<\/em> is totally aged by the artisanal solera<\/em> method and sherry is aged by the same means, hence the name: Solera<\/em>. In Spanish the world solera<\/em> has at least two meanings. Solera<\/em> is an ageing system and also a word to mean class, tradition, character, long pedigree.<\/p>\n

In the case of Solera<\/em>, the cocktail, it has two spirits aged by solera<\/em> and has a lot of solera<\/em> too: it is smooth, classy, complex\u00a0and very elegant. This is a must. Sip it once and you will fall for it.<\/p>\n

I found this cocktail in Left Coast Libations<\/a><\/em>, the book by Ted Munat<\/a>, who suggests Dominic may be \u201ca spirits god.\u201d If you are going to judge him by his Solera<\/em>, then he is.<\/p>\n

Dominic recipe calls for John D. Taylor\u2019s Velvet falernum, but since I\u2019m becoming a fan of homemade syrups, I use my own. Dominic also suggests garnishing with orange peel, but since I have plenty of Meyer lemons, I used lemon peel instead. Salud!<\/em><\/p>\n

Solera<\/strong>
\n1 \u00be oz Ron de Venezuela Santa Teresa 1796<\/em>
\n1 \u00bd oz sherry
\n\u00bd oz falernum<\/p>\n

Stir all the ingredients with ice. Strain into a cocktail glass and garnish with lemon peel.<\/p>\n
