I tried it and it works perfectly. Before this big discovery, only comparable to the joy of being able to make pesto in a food processor, I thought pesto was only good if it was made fresh.<br \/>\n<a name=\"more\"><\/a><\/p>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/3.bp.blogspot.com\/-TvBfGg4p9Hs\/Tlv4VX3wBRI\/AAAAAAAAEQw\/vLxfNtjyo-Y\/s1600\/IMG_1447.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/3.bp.blogspot.com\/-TvBfGg4p9Hs\/Tlv4VX3wBRI\/AAAAAAAAEQw\/vLxfNtjyo-Y\/s640\/IMG_1447.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<p>The truth is pesto is so easy to make that I never thought about the need of preserving it. But after all the tomato <a href=\"https:\/\/enrilemoine.com\/2011\/07\/tomato-frenzy-canning-canning-canning.html\">canning<\/a>,<a href=\"https:\/\/enrilemoine.com\/2011\/08\/1-2-3-basic-tomato-sauce.html\"> canning<\/a>, and more <a href=\"https:\/\/enrilemoine.com\/2011\/08\/roasted-tomatoes.html\">canning<\/a>, I was wondering what to do to preserve the wonders of my basil for the rest of the year\u2026<\/p>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/4.bp.blogspot.com\/--Q7W_tooSVc\/Tlv317hDpYI\/AAAAAAAAEQk\/xwSUaHwYshU\/s1600\/IMG_1440.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/4.bp.blogspot.com\/--Q7W_tooSVc\/Tlv317hDpYI\/AAAAAAAAEQk\/xwSUaHwYshU\/s640\/IMG_1440.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<p>And the answer is freezing it. The best part is the freezing and thawing doesn\u2019t affect either the flavor or the texture, and you can treat yourself not only with pasta, but also with pizzas, salads, <i>crostinis<\/i> and <i>bruschettas <\/i>with pesto<\/p>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/4.bp.blogspot.com\/-PfngRxCEXNo\/Tlv3wsN4JyI\/AAAAAAAAEQg\/HFXo4jCB5GA\/s1600\/IMG_1448.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/4.bp.blogspot.com\/-PfngRxCEXNo\/Tlv3wsN4JyI\/AAAAAAAAEQg\/HFXo4jCB5GA\/s640\/IMG_1448.JPG\" width=\"640\" height=\"414\" border=\"0\" \/><\/a><\/div>\n<p>The pesto in the pictures is the classic <i><a href=\"https:\/\/enrilemoine.com\/2011\/06\/vermicelli-with-basil-and-pine-nuts.html\">pesto alla Genovese<\/a><\/i>. I made four batches with sweet basil and two more with Thai basil, which is a little bit spicy. I put them in plastic freezable containers and froze them!
