It was a staple in my grandma Ligia\u2019s kitchen. In that comforting kitchen, where everything was delicious and yummy, you could taste love in every single bite.<\/p>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/2.bp.blogspot.com\/-G1NI7X9V7Eo\/ToaZQ-dDkHI\/AAAAAAAAEfo\/JxpDEt0RrMc\/s1600\/3+IMG_0714.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/2.bp.blogspot.com\/-G1NI7X9V7Eo\/ToaZQ-dDkHI\/AAAAAAAAEfo\/JxpDEt0RrMc\/s640\/3+IMG_0714.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<p>My grandma was the most creative self taught cook in this world. I don\u2019t remember her having a recipe notebook, but for me, she was the best cook ever.<\/p>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/1.bp.blogspot.com\/-OdlhS5_LzRE\/ToaZUEtMIzI\/AAAAAAAAEfs\/6BQ_WWwV8_8\/s1600\/4+IMG_0720.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/1.bp.blogspot.com\/-OdlhS5_LzRE\/ToaZUEtMIzI\/AAAAAAAAEfs\/6BQ_WWwV8_8\/s640\/4+IMG_0720.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<p>In a time with no internet, TV cooking shows and cookbooks \u2014like the ones we have right now\u2014, she used to create the most appealing meals to feed her eight children and then us, the lucky grand children under her care.<\/p>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/4.bp.blogspot.com\/-PNJ3H-gbWUU\/ToaZW2doJVI\/AAAAAAAAEfw\/YSCXp4y9NaY\/s1600\/5+IMG_0723.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/4.bp.blogspot.com\/-PNJ3H-gbWUU\/ToaZW2doJVI\/AAAAAAAAEfw\/YSCXp4y9NaY\/s640\/5+IMG_0723.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<p>I think she called this salad <i>Ensalada de ruedas<\/i>\u00a0(Wheel Salad), because boiled ingredients are sliced creating multicolor circles. My grandma was so cool that she made us not only eat it, but also like it. I still don\u2019t have that kind of persuasion power over Andr\u00e9s Ignacio (9) and Tom\u00e1s Eugenio (7).<\/p>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/3.bp.blogspot.com\/-MTNScNG62lI\/ToaZZVxgAbI\/AAAAAAAAEf0\/_Vt7OAOOIe8\/s1600\/6+IMG_0711.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/3.bp.blogspot.com\/-MTNScNG62lI\/ToaZZVxgAbI\/AAAAAAAAEf0\/_Vt7OAOOIe8\/s640\/6+IMG_0711.JPG\" width=\"640\" height=\"456\" border=\"0\" \/><\/a><\/div>\n<p>I love it mostly because it looks like a flower and also because of the combination of flavors and textures: neutral starchy potatoes, sweet beets and carrots, crispy and juicy fresh onions and then the eggs boiled to perfection, all dressed with vinaigrette, made of olive oil, white wine vinegar, salt and pepper.<\/p>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/1.bp.blogspot.com\/-T4oNUlIvBfw\/ToaZkrUR7PI\/AAAAAAAAEf8\/P7ybvZTkddA\/s1600\/7+IMG_0709.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/1.bp.blogspot.com\/-T4oNUlIvBfw\/ToaZkrUR7PI\/AAAAAAAAEf8\/P7ybvZTkddA\/s640\/7+IMG_0709.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<p>My grandma used to boil all the ingredients together. With eight kids, I don\u2019t blame her. My \u201csecret\u201d is to boil them separately, so I can get the right cooking time and color for each. Here is my recipe. Strain and let cool down. Peel the potatoes, beets and carrots and slice them. In a shallow dish or salad plate, make a layer of potatoes, then a layer of beets, then onions, carrots and finally eggs. In a jar, make the vinaigrette with the olive oil, vinegar, salt and pepper and dress the salad with it.
