My sister Carola (aka Carru) and I went to a wedding in Paris and spent 10 days having\u00a0<i>entrec\u00f4te<\/i>, <i>des frites<\/i>, lentil and onion soups, <i>du fromage<\/i>, cr\u00eapes and <i>du vin<\/i>.<br \/>\n<a name=\"more\"><\/a><\/p>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/2.bp.blogspot.com\/-KvPIRhoC248\/TzKgFjVpaHI\/AAAAAAAAHCM\/zAtufdv9UaM\/s1600\/1+IMG_3137.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/2.bp.blogspot.com\/-KvPIRhoC248\/TzKgFjVpaHI\/AAAAAAAAHCM\/zAtufdv9UaM\/s640\/1+IMG_3137.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<p>We went to visit the Champagne region with our friend Cecile, who arranged private tastings for us at <a href=\"http:\/\/www.salondelamotte.com\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><i>Maison Delamotte<\/i><\/a> and <a href=\"http:\/\/www.moet.com\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">M\u00f6et et Chandon<\/a>, both in \u00c9pernay.<\/p>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/1.bp.blogspot.com\/-z_TEMPvWRNk\/TzKgJwj89rI\/AAAAAAAAHCU\/bKE6hvI_vtQ\/s1600\/2+IMG_3129.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/1.bp.blogspot.com\/-z_TEMPvWRNk\/TzKgJwj89rI\/AAAAAAAAHCU\/bKE6hvI_vtQ\/s640\/2+IMG_3129.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<p>We were so lucky that we spent the night with friends in a little house located at <i>Rue Dom P\u00e9rignon<\/i>, a street named after the Benedictine monk who, more than three centuries ago, made major contributions to the <i>champenoise<\/i> method to make the finest sparkling wines.<\/p>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/1.bp.blogspot.com\/-WChPPIgWxXk\/TzKgNtSMwnI\/AAAAAAAAHCc\/9ZK76qiBSjs\/s1600\/3+IMG_1905.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/1.bp.blogspot.com\/-WChPPIgWxXk\/TzKgNtSMwnI\/AAAAAAAAHCc\/9ZK76qiBSjs\/s640\/3+IMG_1905.JPG\" width=\"640\" height=\"448\" border=\"0\" \/><\/a><\/div>\n<p>That morning the bells from the abbey where <a href=\"http:\/\/en.wikipedia.org\/wiki\/Dom_P%C3%A9rignon_(person)\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Dom Pierre P\u00e9rignon<\/a> is buried, woke us up.<\/p>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/4.bp.blogspot.com\/-GPD76UXPnHQ\/TzKgRGCR7YI\/AAAAAAAAHCk\/dvdYf_Y1FCI\/s1600\/4+IMG_2190.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/4.bp.blogspot.com\/-GPD76UXPnHQ\/TzKgRGCR7YI\/AAAAAAAAHCk\/dvdYf_Y1FCI\/s640\/4+IMG_2190.JPG\" width=\"640\" height=\"418\" border=\"0\" \/><\/a><\/div>\n<p>Carru and I had a plan (we still have it but we put it on hold, since I moved to Southern California.)<\/p>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<p>Back in Paris, walking by <i><a href=\"http:\/\/en.wikipedia.org\/wiki\/Saint-Germain-des-Pr%C3%A9s\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Saint-Germain-des-Pr\u00e9s<\/a><\/i>, Michelin guide in hand, it started to rain torrents and suddenly we found ourselves running for shelter.<\/p>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/3.bp.blogspot.com\/-UIHM3c6B5Ww\/TzKgXOvowLI\/AAAAAAAAHC0\/OtSonEeFtew\/s1600\/6+IMG_3093.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/3.bp.blogspot.com\/-UIHM3c6B5Ww\/TzKgXOvowLI\/AAAAAAAAHC0\/OtSonEeFtew\/s640\/6+IMG_3093.JPG\" width=\"640\" height=\"456\" border=\"0\" \/><\/a><\/div>\n<p>We made it to caf\u00e9 <i>Les Deux Magaux<\/i>, where Jean Paul Sartre and Simone de Beauvoir had their <i>rendezvous<\/i>, and Albert Camus and Pablo Picasso were habitu\u00e9s.<\/p>\n<div style=\"clear: both; But it wasn\u2019t until I mastered the art of making my <a href=\"https:\/\/enrilemoine.com\/2011\/11\/worry-free-pie-dough.html\">worry free pie dough<\/a>, a couple of months ago, that I decided to make my own apple <i>tarte tatin<\/i>.<\/p>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/1.bp.blogspot.com\/-s4ifMlkkY8g\/TzKr51wpKCI\/AAAAAAAAHDY\/NSf171xqtpI\/s1600\/10++IMG_3131.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/1.bp.blogspot.com\/-s4ifMlkkY8g\/TzKr51wpKCI\/AAAAAAAAHDY\/NSf171xqtpI\/s640\/10++IMG_3131.JPG\" width=\"640\" height=\"456\" border=\"0\" \/><\/a><\/div>\n<p>Comparable in simplicity and elegance with c<i>r\u00e8me brul\u00e9<\/i>, this is one of the easiest desserts ever: besides de pie crust, it\u2019s made out of three ingredients: apples, sugar and butter.\u00a0Here is, to my loving sister Carru, my recipe!<\/p>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/3.bp.blogspot.com\/-BChTS8OiERQ\/TzKr-WW8JHI\/AAAAAAAAHDg\/Scumx2wAp-s\/s1600\/11+IMG_3135.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/3.bp.blogspot.com\/-BChTS8OiERQ\/TzKr-WW8JHI\/AAAAAAAAHDg\/Scumx2wAp-s\/s640\/11+IMG_3135.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<p><b><i>Tarte Tatin aux Pommes | <\/i>Ingredients for 8 portions<\/b><br \/>\n1 pie dough recipe (please substitute the sugar for \u00bc tsp. of salt)<br \/>\n\u00be cup of sugar<br \/>\n6-7 Granny Smith apples, peeled, quartered and cored,<br \/>\n2 Tbs. of lemon juice<br \/>\n4 Tbs. of butter<br \/>\nWhipping cream or <i>cr\u00e8me fra\u00eeche<\/i><\/p>\n<p>In a bowl, toss the apples with the lemon juice and set aside. Preheat the oven to 375\u00b0F.<\/p>\n<p>In a 10-inch skillet over low heat, cook the sugar until it begins to melt. Stir until the sugar turns brown. Remove the pan from the heat and arrange the apples rounded side down in concentric circles. Fill the gaps with more pieces of apples. Place the butter over the apples. Cook over medium heat for 20 minutes until the sugar turns into a dark caramel.<\/p>\n<p>In a floured surface, with a roller, roll the dough into a circle \u00bc inch thick. Carefully place the dough circle on top of the skillet with the apples. Trim the dough. Place the skillet on the bottom rack of the oven and bake it for 25 minutes, until the crust is golden. Remove from the oven and let stand for 15 minutes. With a knife, loosen the tart around the edges. Place a serving dish on top of the skillet. With the help of two kitchen towels, quickly and carefully, invert the tart into the dish.
