They are my dear Chuky Reyna\u2019s hallacas. Reyna (the best and last boss I had and certainly the most indulgent of all), of Chuky and seven more children, and grandmother of, among many other grandchildren, Isabella Reyna, with whom I also had the pleasure of working a few years ago.<\/span><\/span><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/2.bp.blogspot.com\/-8QIbjFq3J0Q\/VI4-_JEO1VI\/AAAAAAAAQJE\/akRHKH9-USQ\/s1600\/IMG_6432.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/2.bp.blogspot.com\/-8QIbjFq3J0Q\/VI4-_JEO1VI\/AAAAAAAAQJE\/akRHKH9-USQ\/s1600\/IMG_6432.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<div style=\"margin-bottom: 0in;\"><span style=\"font-size: 12pt; line-height: 115%;\"><span style=\"font-family: Georgia, Times New Roman, serif;\">Mar\u00eda Josefina Par\u00e9s de Reyna had the secret of the perfect Caracas-style hallaca\u2019s flavor. The very thin and soft dough did not crack. The stew, of pork and chicken, had the sweet touch that we Caraque\u00f1os like so much and that comes from sweet pepper, <i>papel\u00f3n <\/i>(<i>piloncillo<\/i>, unrefined whole sugar cane sweetener) and sweet cooking wine; and it also had a delicate touch of acidity, furnished by the exact amount of vinegar and mustard pickles.<\/span><\/span><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/1.bp.blogspot.com\/-DG7R_NTBMJo\/VI4_uGL_VzI\/AAAAAAAAQJQ\/3CO3L6QyG3s\/s1600\/IMG_6436.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/1.bp.blogspot.com\/-DG7R_NTBMJo\/VI4_uGL_VzI\/AAAAAAAAQJQ\/3CO3L6QyG3s\/s1600\/IMG_6436.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<div style=\"margin-bottom: 0in;\"><span style=\"font-size: 12pt; line-height: 115%;\"><span style=\"font-family: Georgia, Times New Roman, serif;\">A year ago, I met with Chuky in Miami for work matters. Of course we ended up talking about food and she invited me to eat hallacas.<\/span><\/span><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/2.bp.blogspot.com\/-am0lhI6hdzw\/VI4_7jgh4UI\/AAAAAAAAQJY\/sj-TcrVkCHo\/s1600\/IMG_6442.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/2.bp.blogspot.com\/-am0lhI6hdzw\/VI4_7jgh4UI\/AAAAAAAAQJY\/sj-TcrVkCHo\/s1600\/IMG_6442.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<div style=\"margin-bottom: 0in;\"><span style=\"font-size: 12pt; line-height: 115%;\"><span style=\"font-family: Georgia, Times New Roman, serif;\">Undisputed heir to the touch of Mrs. Reyna, whom she helped knead the hallaca dough when she was just four years old, Chuky also inherited her mother&#8217;s generosity.<\/span><\/span><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/1.bp.blogspot.com\/-AJYsh70stdc\/VI5AcN_EO4I\/AAAAAAAAQJg\/Onl5ymcl42c\/s1600\/IMG_6422.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/1.bp.blogspot.com\/-AJYsh70stdc\/VI5AcN_EO4I\/AAAAAAAAQJg\/Onl5ymcl42c\/s1600\/IMG_6422.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<div style=\"margin-bottom: 0in;\"><span style=\"font-family: Georgia, Times New Roman, serif;\"><span style=\"font-size: 12pt; line-height: 115%;\">And just like Pimpi <\/span><span style=\"font-size: 12pt; line-height: 115%;\">\u2014<\/span><span style=\"font-size: 12pt; line-height: 115%;\">as Mrs. Reyna was called by her grandchildren<\/span><span style=\"font-size: 12pt; line-height: 115%;\">\u2014<\/span><span style=\"font-size: 12pt; line-height: 115%;\">, who once surprised everyone with some cooking classes she taught so that people could learn to make hallacas like hers, Chuky invited me to be part in the making of her own ones. You can\u2019t imagine what a privilege that was.<\/span><\/span><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/4.bp.blogspot.com\/-OXHNfpH3zZ4\/VI5A7wHItPI\/AAAAAAAAQJo\/MwSerP7jQco\/s1600\/IMG_6421.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/4.bp.blogspot.com\/-OXHNfpH3zZ4\/VI5A7wHItPI\/AAAAAAAAQJo\/MwSerP7jQco\/s1600\/IMG_6421.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<div style=\"margin-bottom: 0in;\"><span style=\"font-size: 12pt; line-height: 115%;\"><span style=\"font-family: Georgia, Times New Roman, serif;\">In Venezuela, there are as many hallaca recipes as families (maybe one day I\u2019ll encourage myself to make mine again and post the recipe here).<\/span><\/span><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/3.bp.blogspot.com\/-BMSXiYm-t8A\/VI5BWLPXVaI\/AAAAAAAAQJw\/9EnLxtJo_Gk\/s1600\/IMG_6429.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/3.bp.blogspot.com\/-BMSXiYm-t8A\/VI5BWLPXVaI\/AAAAAAAAQJw\/9EnLxtJo_Gk\/s1600\/IMG_6429.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<div style=\"margin-bottom: 0in;\"><span style=\"font-size: 12pt; line-height: 115%;\"><span style=\"font-family: Georgia, Times New Roman, serif;\">And the taste and flavor of these tamales wrapped in plantain leaves, undisputed protagonists of the Christmas table, are a secret that passes from generation to generation and is usually not written anywhere.<\/span><\/span><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/4.bp.blogspot.com\/-4qCtuj9SIL8\/VI5B2iCieVI\/AAAAAAAAQJ4\/q55UTuSSXcE\/s1600\/IMG_6428.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/4.bp.blogspot.com\/-4qCtuj9SIL8\/VI5B2iCieVI\/AAAAAAAAQJ4\/q55UTuSSXcE\/s1600\/IMG_6428.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<div style=\"margin-bottom: 0in;\"><span style=\"font-size: 12pt; line-height: 115%;\"><span style=\"font-family: Georgia, Times New Roman, serif;\">In return for her generosity, I offered Chuky to write the recipe, which for the first time is now &#8220;ink on paper&#8221; to the delight of many.<\/span><\/span><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/1.bp.blogspot.com\/-qpjfjTmhsxg\/VI5CNZPfoDI\/AAAAAAAAQKA\/ItU6gYhdTig\/s1600\/IMG_6424.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/1.bp.blogspot.com\/-qpjfjTmhsxg\/VI5CNZPfoDI\/AAAAAAAAQKA\/ItU6gYhdTig\/s1600\/IMG_6424.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<div style=\"margin-bottom: 0in;\"><span style=\"font-size: 12pt; line-height: 115%;\"><span style=\"font-family: Georgia, Times New Roman, serif;\">The hallaca has three very important components, namely: the stew, prepared the day before and left to rest uncovered overnight at room temperature; the dough, which is made early on the day when the hallacas are &#8220;ensambled&#8221;; and the plantain leaves on which the dough is spread, and which make the wrapper of this tamal that we Venezuelans call &#8220;multi-sapid&#8221; for the amount of flavors that harmonize in one dish.<\/span><\/span><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/1.bp.blogspot.com\/-A4yB8-QZAOw\/VI5Ch_COG6I\/AAAAAAAAQKI\/2woZou_CAlk\/s1600\/IMG_6430.JPG\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/1.bp.blogspot.com\/-A4yB8-QZAOw\/VI5Ch_COG6I\/AAAAAAAAQKI\/2woZou_CAlk\/s1600\/IMG_6430.JPG\" width=\"640\" height=\"426\" border=\"0\" \/><\/a><\/div>\n<div style=\"margin-bottom: 0in;\"><span style=\"font-size: 12pt; line-height: 115%;\"><span style=\"font-family: Georgia, Times New Roman, serif;\">The best thing about hallacas is that you make them as a family thing: sipping Ponche Crema, listening to <i style=\"mso-bidi-font-style: normal;\">aguinaldos<\/i>(carols) and telling tales. The table where everything is prepared is covered with a plastic tablecloth so that nothing is stained with annatto yellow. Some help cutting up the ingredients for the stew. Others lend a hand with the kneading. Others are in charge of cleaning the leaves.
