I started to make this pizza after Denizen Rum sent me a couple of recipes including a superb grilled peach smash called Georgia Summer.
When I first grilled peaches for that drink, I discovered the wonders of grilling fruits and particularly fleshy peaches.
This pizza is heaven. It combines the grilled peaches with my favorite plain goat cheese and the contrast is superb.
Once out of the oven I sprinkle it with olive oil and fresh basil leaves.
The cherry to the cake is to add some drops of balsamic vinegar reduction. I hope you like it.
Grilled Peach Pizza with Fresh Goat Cheese | Ingredients for 1 medium pizza
2 peaches sliced and grilled (4 minutes each side) 1/2 cup fresh goat cheese Corn meal (for the pizza peel) 8 basil leaves cut into stripes In the middle rack of the oven, preheat a pizza stone to 450°F. Sprinkle the cornmeal on a pizza peel. On a floured surface, with a roller, extend the dough and place it on the pizza peel. Evenly distribute the goat cheese and the peaches. Place the pizza on the pizza stone and bake it for 10 minutes. Take the pizza from the oven. Let cool down for 3-5 minutes.
