Sevilla Libre, Another way to look at the Cubalibre

This is the Spanish version of the classic Cubalibre. It was recently presented at the Sevilla Premium Bartender Show, by Pablo Mosquera-Costoya, as a tribute to fascinating Sevilla, in Southern Spain. So refreshing, the rum is infused with spearmint and instead of regular bitters it calls for a spray of Angostura Orange Bitters. Olé!

Sevilla Libre
1 ¾ oz Ron de Venezuela Santa Teresa Añejo
Spearmint leaves
Angostura Orange bitters
Coca cola

Place the spearmint leaves in a mini colander and pour the rum over the leaves, in a rock glass. Add ice cubes and complete with the soda. Garnish with a sprig of spearmint.
