Sometimes, when I want to do something and I don’t know where to start, I think how would my mom do this?
That’s what happened with these roasted beets. When we harvested them, I decided that I wanted to roast them.
But I never did before so I just imagined what would my mom —who loves to roast vegetables— do. And then, there was the light: with olive oil, fresh thyme, salt and pepper.
I’m sure my mom would love this recipe!
