Researching on new rum cocktails, a few days ago I found Summer in Barcelona, a drink inspired by the fascinating Catalonian city. Among the ingredients, there was a homemade rosemary and thyme syrup and I thought: what can be better than this? I love rosemary and I love thyme. Nothing more Mediterranean than this pair combined in a sweetener.
Based on my experience with other syrups like vanilla, lavender and falernum, I decided to experiment and make my own rosemary and thyme one.
In the process I checked the internet and found Minimally Invasive’s recipe and her wonderful suggestion regarding adding some honey.
This syrup is just perfect in consistency and flavor. The color is so appealing. Everything is sublime in this sweetener. And I can’t stop trying to figure out how I can use it more. Here is the recipe!
Rosemary and Thyme Syrup | Ingredients for two cups
1 cup of water
1 ½ cup of granulated sugar
3 tablespoons honey
3 sprigs of rosemary
4-5 sprigs of thyme
In a small saucepan bring all ingredients to a boil over medium heat. Lower the heat and simmer for 12 minutes, stirring occasionally. Cool, strain, discard the solids and store in a sterilized bottle in the refrigerator.
